Grilled Seasoned Steak

Press generous quantities of Charles Street dry rub on both sides of the steak.  Do not salt steak before grilling, season as desired afterwards.  Grill steak on direct high heat according to the cut and desired temperature below.  After cooking take steaks off grill and let rest for 10 minutes before cutting/serving.

Being aware of the temperature that you are cooking with is critical.  A good instant read thermometer is a wonderful grilling tool to have.  For many dishes like ribs low and slow is the way to go; however, for steaks you want a hot fire for a good sear.
